The story of coffee

Las Delicias Coffee Farm

Las Delicias farm is located in the Montecillos region of the La Paz department in Honduras, near the protected Café de Marcala area. Founded 45 years ago, the farm is characterized by hilly terrain, clay-loam soils, and a moderate climate. Coffee trees are mostly grown under banana shade; due to reduced sunlight exposure, yields are lower, but quality is exceptional. The farm applies natural approaches, including organic fertilizers made from processed coffee byproducts and experimental tree planting to improve water retention and prevent soil erosion. In addition to coffee, avocados are also cultivated on the estate.

Variety: Pacas

Pacas is one of the most important Honduran Arabica varieties, originally discovered in El Salvador as a natural mutation of Bourbon. It is a compact, dwarf variety that allows for denser planting and easier harvesting. Although it has lower disease resistance, it is highly valued for its complex flavor profile, often expressed through vibrant fruit notes, balanced sweetness, and clean elegance in the cup.

Processing Method: Honey

The honey process is a coffee processing method in which only the outer skin of the cherry is removed after harvest, while part of the mucilage remains on the bean during drying. Depending on the amount of retained mucilage, it is classified as yellow, red, or black honey. This technique combines elements of natural and washed processing, often resulting in a fuller body, rich sweetness, and pronounced fruit and floral aromas.
