Pau Brasil is a representative example of a classic Brazilian natural coffee from the Cerrado Mineiro region and serves as the core Brazilian coffee in Ally Coffee’s portfolio. The name Pau Brasil derives from Brazil’s national tree and symbolizes stability, reliability, and the long-standing expertise of local producers.
This coffee does not come from a single farm, but rather from several certified coffee estates that are part of the official Cerrado Mineiro Designation of Origin system. This protected designation of origin ensures full traceability, consistent quality, and a clearly defined sensory identity of the region.
The Cerrado Mineiro Region
Cerrado Mineiro covers an area of 55 municipalities in the state of Minas Gerais and is one of the first coffee regions in the world to receive official Designation of Origin (DO) status. The unique combination of climate, soil, topography, altitude, and the technical expertise of its producers enables the production of coffees with an exceptionally stable, balanced, and clean profile.
Production and Coffee Style
The coffee is grown at an altitude of around 1,100 meters above sea level, consists of the Catuaí variety, and is processed using the natural method, which enhances its inherent sweetness and full body. It is a coffee style that remains consistent even under changing environmental conditions, reflecting a high level of mechanization, technological control, and producer experience.
