Coffee: 15 g
Water: 240 ml at 95°C
Water TDS: 30-50 mg/l
Grind size: Medium grind (650 μm)
Blooming: 30 seconds
Extraction time: 2 minutes 15 seconds
PREPARATION INSTRUCTIONS:
1.) Place a paper filter in the V60 and rinse it with hot water to remove the paper taste and preheat the vessel. Discard the excess water.
2.) Add 15 g of coffee to the rinsed filter and ensure the coffee bed is evenly leveled.
3.) Blooming – First pour: Start by pouring 60 ml of water in the center and continue in concentric circles toward the edges until all the coffee is saturated. Wait 30 seconds for the coffee to degas (bloom).
4.) Main pour – Second pour: At the 30-second mark, slowly add 120 ml of water. Pour in circular motions, starting from the center, moving toward the edges, and back to the center.
5.) Final pour – Third pour: At the 60-second mark, pour the remaining 60 ml of water. Start in the center, gradually moving the stream toward the edges and back to the center.
The entire pouring process should be completed in about 75 seconds, with the extraction finishing at 2 minutes and 15 seconds.
RECOMMENDATION
To find the perfect cup for your taste, experiment with different variables at home. Adjust only one variable at a time to better understand its effect on the flavor. Keep notes to help you discover your ideal coffee recipe more quickly.
GRIND SIZE
- A finer grind (smaller particles) will extend the extraction time and increase flavor intensity.
- A coarser grind (larger particles) will shorten the extraction time and create a lighter, more delicate taste.
COFFEE-TO-WATER RATIO
- More coffee with the same amount of water will intensify the flavor.
- Less coffee with the same amount of water will produce a gentler, more balanced taste.
WATER TEMPERATURE
- Higher temperature (94–96°C) will enhance the sweetness and body of the coffee.
- Lower temperature (90–92°C) will reduce bitterness and create a brighter, more acidic profile.
BLOOMING TIME
- A longer bloom (30–45 seconds) can improve extraction uniformity and highlight complex flavors.
TOTAL EXTRACTION TIME
- Shortening the time (e.g., 2:00 min) will result in a brighter, juicier coffee with more acidity.
- Extending the time (e.g., 3:00 min) will create a stronger, richer cup with more bitterness and higher caffeine content.

Information about coffee
The story of coffee
Finca Hartmann is synonymous with pioneering premium coffee production in Panama. The story of the Hartmann family began with Alois Strasil Hartmann, born in 1891 in the Moravian region of the former Austro-Hungarian Empire. His son, Ratibor Hartmann, fulfilled his father’s vision in 1940 by establishing Finca Hartmann, which today is regarded as one of the most prestigious coffee estates in the country.
Finca Hartmann is a family-run farm where each generation actively contributes to coffee cultivation, production, and quality. A commitment to sustainable farming and respect for nature lies at the heart of their operation. Situated at an altitude between 1,300 and 2,000 meters and bordering La Amistad National Park, the estate grows coffee under centuries-old rainforest trees. The Hartmann family preserves the ecosystem by replanting native trees and plants, which helps maintain healthy soil and ensures long-term production quality.
Maragogype – A Giant in the Coffee World
The Maragogype variety, also known as “elephant beans” due to its exceptionally large coffee beans, is a rare and extraordinary Arabica variety. At Finca Hartmann, it grows in the shade of native trees, preserving its unique structure and aroma. Due to its specific characteristics, this variety requires special care during cultivation but delivers rich, full-bodied flavors with a subtle fruity note in the cup.
Natural Processing Method
The natural processing method at Finca Hartmann is carried out with great care and attention. Maragogype coffee cherries are left to ferment naturally in the sun without the addition of water. As they slowly dry on raised beds, sugars from the cherry penetrate the bean, creating a distinct sweetness and flavor complexity. The result is a cup full of tropical notes, with a rich body and a long-lasting, pleasant aftertaste.
With Maragogype from Finca Hartmann, experience an unforgettable combination of tradition, nature, and exclusive flavor.
